Colette Bonnet cultivates organic vines located in the Noé les Mallets village. Ms. Bonnet is the referent of the Association of Organic Champagnes. Organic viticulture is characterized by the absence of artificial chemicals and limited use of natural elements (sulphur, copper, clay).

The 2011 is made with 53% Pinot Blanc and 47% Pinot Noir grapes. It is very rare to taste a Champagne made of Pinot Blanc. The bubble is fine and delicate, a sign of a certain maturity. Nose The nose reveals youthful aromas and a perfect combination of the two grape varieties. Then we perceive floral notes, chamomile aromas, a sweet fruitiness and a beautiful aromatic complexity. Over time we will move towards notes of vanilla, toasted bread, almonds, fresh dates and roasted hazelnuts. On the palate Powerful, gourmet and full-bodied on the palate with great harmony. There are mirabelles, plums and a few notes of cherries and cherries. A few notes of bergamot, lime blossom, hawthorn. The palate is rich and delicate.
