2021 Vincent Dauvissat Petit Chablis, Burgundy France (750ml)   


This 2014 Premier Cru Vaillons is a wine about which we are all really excited. It shows a nice aged character with notes of slightly bruised yellow apple, dried white flowers and preserved lemon citrus.

The medium-bodied palate is layered with flavor and texture yet the most exciting thing about this wine is its finish of incredibly bright acidity and that classic Chablis stony minerality. This is a complex and obviously age worthy wine that should be part of any white Burgundy fan's cellar. The Dauvissats have been growing Chardonnay in Chablis since 1899 and the current day cave lies underneath the family house from the 17th century. They had mostly sold their fruit to local negotiants yet began bottling estate wines in 1963. In 1979, Jean Dauvissat increased the production to a whopping 250 cases and he slowly expanded the estate over the years to its current size of just under 10 hectares. Sadly, Jean passed away several years ago so his son, Sebastien runs the domaine today with his mother, Evelyne. And the Dauvissat name is living on through Sebastien as one of the premier domaines in the region.
