Takatenjin 'Soul of the Sensei' Junmai Daiginjo, Japan (720ml)   

This comes from Shizuoka prefecture (like wakatake onikoroshi) and the “Sensei” that the title refers to is Doi sensei the former master brewer of Takatenjin that isolated the prefectural yeast and taught the brewers of Shizuoka how to make a dry style of Daiginjo that has become synonymous with the region. This sake is truly elegant on the palate with honeydew, jasmine, white pepper and anise.
