At Stirm, they have two simple goals that direct every operation above all else: to present the narrative of the growing season in a delicious and transparent format, and to craft a wine with a strong foundation intended to age for decades. The fundamentals that they follow are old-school; they work with the seasons and they spend the majority of their time working in the vineyards. When someone says Riesling, understandably, you may not think California wine. For this flight we will feature two of Strim’s remarkable Rieslings. Stirm produces Rieslings because they are delicious and Stirm is on a mission to pioneer the new age of California Riesling, which has a long and successful history in California – 1850’s – 1960’s. The adaptability, historical success and hardiness of Riesling grapes make this grape ideal to shine now and as growing conditions in California change. Every year is unique, so the vineyard and cellar practices at Strim evolve annually to adapt to the changes each season brings. The results of Stirm’s commitment and effort are wines that are singular, authentic and that represent a region, a site, and are a piece of living California history.
