2012 Paratus Cabernet Sauvignon, Mount Veeder, Napa Valley, California (750ml)   


Paratus is a very small producer of superb, 100% Estate Cabernet Sauvignon from a dry-farmed, steeply terraced vineyard on Mount Veeder, 1400 feet above the floor of Napa Valley.

Like many mountain vineyards, the moderate range of temperatures experienced during the growing season allows for slow, even ripening – ideal for full-flavored Cabernet Sauvignon. These fine Cabernets are firm, deeply flavored wines, but with a remarkable elegance and density. They are sybaritic wines to savor and to cellar. We had the pleasure of featuring the 2010, 2011 and 2012 vintages in an event recently. They were shown with a barrel sample of the 2015 and a library selection of the 2006. All five wines revealed excellent structure, balance and that wonderful Mount Veeder character. Given the price of many Napa Valley Cabernet these days, this 2010 is a real bargain at $70 and easily has a lot longer life ahead of it, even though it is drinking beautifully now. ~ Peter Granoff, Master Sommelier
