From its founding in 1870, the Eau-de Vie's from Massenez have set a benchmark for the category. Poire Williams may be the most aromatic of the range, with pristine fresh pear on the nose, and then a bone dry palate. These are NOT liqueurs, and are NOT sweet. They are traditionally consumed at the end of a meal, chilled or over ice, but also work very well in mixed drinks.

Producer notes ~ "Pinhook Collaboration Series #2, mash bill 70% corn, 20% Rye, 5% malted barley. 118.9 Proof.: For the series’ second release, Pinhook has partnered with Garrett Oliver, brewmaster of Brooklyn Brewery and 2014 James Beard Award winner, to produce an artfully structured high-proof, high-rye bourbon. This special collaboration will fund 20 scholarships in brewing and distilling to people of color through the Michael J. Jackson Foundation, of which Oliver is chair. Blended and proofed from 20 pinhooked barrels out of Still Austin. Aged for 4 years in the Texas heat, which speeds aging and results in a whiskey with a maturity that far exceeds its time in the barrel.

The Raymond Ragnaud Pineau des Charentes is made by combining 2/3 unfermented grape must (containing no alcohol) with 1/3 young Cognac at about 60% alcohol. The strength of the alcohol prevents the yeasts and sugar from fermenting, stabilizing the wine between at 17% alcohol. This mixture then goes into foudre (large oak vats) to age for four years, over which time the Pineau picks up aromas that include notes of figs, pears, and nuts. The sugar from the grape must makes this sweet, while the acidity and alcohol never permits it from becoming cloying. Usually served with an ice cube in a tulip-shaped glass, this is a classic French aperitif, very popular back in the fifties and sixties and enjoying a bit of a comeback, particularly when incorporated into creative cocktails. Other uses for Pineau include basting roasted meats or thickening sauces. We enjoy it in warmer weather combined with tonic and ice in a tall glass. Add a lemon twist, squeeze of lime or orange wedge if you wish.
