Producer notes ~ "43% ABV / 86 Proof 64% Corn 15% Rye 21% Malted Barley We begin by fermenting a traditional sour mash of corn and rye at colder temperatures, but without the aid of refrigeration. Fermentation takes more time this way, but results in a softer whiskey and develops subtle flavors such as vanilla, pear, and raspberry. We then distill the mash in our small batch copper potstill on grain to extract fuller and rounder flavors from the corn and rye. Finally, we barrel the distillate at the Pre-Prohibition standard of 98 proof, so that the barrel may add subtle notes of oak and vanilla and does not overpower the finished whiskey."

From a firm established in 1836 by Edmond Briottet, this wonderful liqueur is made with bananas from Costa Rica which are hand-peeled to expose their pulp. They are then macerated in neutral alcohol derived from sugar beets to release the ripe banana flavor. A great ingredient in a variety of cocktail recipes, as suggested by Briottet here: Try the “After Sex” cocktail: 3 cl of vodka, 2 cl of Briottet Banana liqueur, orange juice, 0.5 cl of Briottet Poppy Liqueur and a pinch of sugar. Put the ingredients into a glass filled with ice cubes and top it up with orange juice. 25% ABV.

Kamiki was created to further this tradition by taking a range of some of the finest whiskies from Japan and blending them with the best whiskies from overseas before maturing in a range of peculiar wood types. The results are smooth, intricate and intriguing expressions that differ from the norm and deliver a truly unique tasting experience. This new expression was finished in Japanese Cedar wood, just like the two before it, before being transferred to casks made from the famous Sakura tree for further finishing. The Sakura tree is hugely famous in Japan. It symbolises the beginning of Spring and is intrinsically connected to “mono no aware”, a Japanese term for the awareness of impermanence, or in other words – mortality."
