The Raymond Ragnaud Pineau des Charentes is made by combining 2/3 unfermented grape must (containing no alcohol) with 1/3 young Cognac at about 60% alcohol. The strength of the alcohol prevents the yeasts and sugar from fermenting, stabilizing the wine between at 17% alcohol. This mixture then goes into foudre (large oak vats) to age for four years, over which time the Pineau picks up aromas that include notes of figs, pears, and nuts. The sugar from the grape must makes this sweet, while the acidity and alcohol never permits it from becoming cloying. Usually served with an ice cube in a tulip-shaped glass, this is a classic French aperitif, very popular back in the fifties and sixties and enjoying a bit of a comeback, particularly when incorporated into creative cocktails. Other uses for Pineau include basting roasted meats or thickening sauces. We enjoy it in warmer weather combined with tonic and ice in a tall glass. Add a lemon twist, squeeze of lime or orange wedge if you wish.More info

The result is remarkably unique tequila finished whiskey with notes of agave and vanilla on the nose and honey, peppercorn and orange citrus to taste. Pairing tequila and whiskey is always a risky move, but this was a risk worth the reward."More info

Producer notes - "11 years in the making. And right on time. Many distillers consider absinthe to be the pinnacle of their art. We labored over ours accordingly. It wasn’t legal to sell when he started, but master distiller Lance Winters spent over a decade refining his recipe anyway, which made us ready when the ban was lifted. St. George Absinthe Verte wasn’t just the first legal American absinthe, it still sets the standard."More info

Its timeless recipe marries Ethiopian coffee, roasted French chicory, and Madagascar vanilla—and it’s been winning accolades for its faithful flavor since 2014."More info

Producer notes - "The Old Fashioned is revered for its versatility and simplicity. This variation on the classic speaks to wistful days spent in Milton-Freewater, OR, and we’ve transposed our fondness for the Pacific Northwest bouquet into our own bitters. Stir over ice, and if you're truly civilized, garnish with a twist of orange. Ingredients: Rye Whiskey, Housemade Bitters of Filbert & Fir, Simple Syrup. ABV 41.5%"More info
Producer notes ~ "Toki is a blend of Yamazaki's three distilleries, Yamazaki, Hakushu and Chita. Toki means "time" in Japanese. It's a concept rich in meaning the world over, but particularly in Japan where respect for tradition and reinvention sparks a powerful creative energy. Inspired by that interplay, Suntory Whisky Toki brings together old and new - the House of Suntory's proud heritage and its innovative spirit - to create blended Japanese whisky that is both groundbreaking and timeless. Silky with a subtle, sweet and spicy finish.More info
40% ABV. Appearance ~ Bright Crystal color with silver tones, nice bodied.
Aroma ~ The first impression is herbal with hints of mint and anise, followed by white pepper and spices (cinnamon and clove); mild citrus notes. If allowed to breathe in the glass, apple and floral notes appear.
Taste ~ Cooked Agave, mint, pepper, with a residual sweetness (white chocolate) and slightly herbaceous. Presents a long final, spicy and sweet at the same time. Very complex and rounded.
Comments ~ The essence of Agave. Who do not enjoy Tapatío Blanco, could very well stop drinking tequila, because this is exactly what silver (blanco) tequila should be.
38% ABV. Aged 4-6 months in American white oak barrels, previously used in ageing Bourbon.
Appearence ~ Pale straw yellow color; luminous, with golden and slightly greenish tones. Medium bodied due to its lower alcoholic content.
Aroma ~ Fruity, intense cooked Agave, apple, pear, vanilla and caramel, slightly smoky. White pepper comes in a subtle form. Allowed to breath it becomes creamy with hints of butter. Spices such as clove and sandalwood.
Taste ~ The sweetness of the cooked Agave flavors predominate; herbal, pepper, slightly smoked with notes of caramel, cocoa, vanilla and nuts (walnut, peanut, hazelnut). A very soft & smooth, yet spicy finish.
Comments ~ A very well balanced tequila between the spicy and the sweet flavors. Perfect for a Margarita cocktail, but also to enjoy neat or on the rocks.
2021 Agave Harvest, La Ladera Single Estate. Producer Notes ~ "The Tequila Ocho story begins with the Camarena family, who started making tequila in 1937 and are now in their third generation as tequila producers. This family is one of the few producers that still make tequila in the slow, artisanal way. With the Camarenas nothing is rushed or hurried during the whole process, from the growth of the agave to the final distillation. Tequila Ocho is a joint partnership between the Camarenas and Tomas Estes. Estes, the creator and owner of Mexican bars and restaurants since 1976 is a higly respected personality in the bar and spirits world.More info

Producer Notes - "The blanco version of tequila is the product that is obtained after distillation. It contains 40% alcohol content and is unaged. Our Blanco is a classic. It’s an easy-to-drink agave-forward spirit with light hints of vanilla and citrus. Our blanco tequila has also been oxygenated, which helps remove some unwanted chemicals and compounds, accentuating the sweetness of the natural agave. Made with rain, spring and deep well water, it has just the right balance of minerality. Plus, there’s a bit of a black pepper finish for an added kick.More info
Producer notes ~ "Made in California’s San Joaquin Valley from a blend of dry white wine that includes Orange Muscat, Vya Extra Dry is carefully hand infused at Quady Winery with a selection of over fifteen dried herbs. In Vya Extra Dry the flowers and leaves of the plants are used for the infusion, whereas in the Vya Sweet, the roots and seeds of different plants are used. The flowers and leaves of different plants make Vya Extra Dry powerfully herbaceous, crisp, and refreshing. A few of the herbs used include lavender, linden, sage, orris, alfalfa, and angelica. Fresh and aromatic, Vya Extra Dry wakes up the taste buds, and makes a wet martini or an aperitif on the rocks that livens up the end of the day."More info
