The palate follows a similar route, but instead of the caramel falling away the rest of the notes get turned up. This is not going to send you barging down the aisles snatching up every bottle available, but it will call to you from the shelf on a Wednesday after work or when you’re looking to fool around with some cocktails. Jefferson’s was founded in 1997 by Trey Zoeller and his father Chet — a famed Bourbon historian who wrote the book on Kentucky distilleries. The Jefferson’s Ocean series started as an experiment of just three barrels. Each limited edition release of Jefferson’s "Aged at Sea" Ocean series is different — they call them "Voyages." The Bourbon is aged literally at sea. The route, the temperatures, and tossing of the sea are different. And they experiment with different mash bills, distillations, and woods too. Jefferson’s Ocean Aged at Sea Voyage 23 Bourbon is the current release. It starts with a blend conventionally aged Jefferson’s Bourbon seven and eight years old. Blade and Bow is produced at the original site of the iconic Stitzel-Weller Distillery in Louisville, Kentucky. The original distillery closed its doors in 1992, and Diageo reopened the facility in 2014. Coming from Fort Collins, CO, this 100% sourced bourbon gets it's signature flavors from the high malted barley content in their mashbill. Along with a fair amount of rye grain, you can expect a lighter style with traces of cinnamon and cocoa which layer against traditional notes of caramel and burnt oak. While the aromatics are nice, they’re very delicate necessitating a good hard inhale to eke them out.More info
