2016 Mestres Visol Brut Nature Cava, Gran Reserva, Spain (750ml)
About the Icons
A blend of Xarel-lo, Macabeo & Parellada, but unlike any Cava we have tasted. The base wines were aged in a combination of stainless steel and chestnut barrels for 6 months. After the second fermentation the wines rested on the lees in cork-finished bottles for 6 years. Periodic agitation contributes to the yeast autolysis and complexity. The result is a remarkably elegant and graceful Cava, bone dry but by no means austere, and with a creamy mid-palate, light toast and a hint of fennel on the long finish. Mestres is a family firm now being run by the 30th generation.
Producer Notes - "Straw yellow color with very fine bubbles. Creaminess, toasted and smoked notes. Fennel in the middle of a bed of brioche, chamomile and citrus (grapefruit). It exhibits frank notes of aniseed, slightly toasted bread, roundness and balance. The contribution of wood is more perceptible on the nose than on the palate, although in a subtle way. The contribution of the Xarel·lo variety is very noticeable. Dry but mellow and with a glyceric tactile sensation. Notes of flower and white fruit, and a hint of water peach. Very integrated carbonic. Very good acidity in a sparkling wine of special complexity. The MESTRES family, documented in Sant Sadurní d’Anoia before 1312 as owner of vineyards and also as merchants of cereals and wines, has remained linked to the wine world for 29 generations. At the time the date of 1312 was taken as the year of the founding of the MESTRES Wineries. This is confirmed in the first labels of sparkling wine: 1312. In MESTRES there is still a large documentation of the ancestors of our family: parchments and documents of 1312, 1591, 1607, 1832, 1901…, they are milestones in the history of the family that allow us to confirm our dedication to the world of wine over centuries."
