Our Flight Nights had  barely started last year when COVID hit, and we are thrilled to be resuming the program. Show up anytime between 4:30 - 7:30, no reservations required or taken, seating as available with COVID spacing observed. Come join us!

Journeyman Meats was founded in 2012 by acclaimed winemaker Pete Seghesio. After the family sold the Seghesio family winery, Pete embraced his other passion, crafting artisanal salumi, sausage, and cured meats.

Pete went to Italy and studied with the world-famous butchers Dario Cecchini of Panzano and the Marini family of Florence. From these icons, Pete learned the art of Italian-style whole animal butchery. Dario and the Marini family taught him that great butchers use local ingredients, recipes passed down from their ancestors, and they take no shortcuts whatsoever. Pete brought this uncompromising philosophy to his small town in Sonoma.

He built a salumificio in Cloverdale where they have designed state-of-the-art aging rooms and then opened an elegant and authentic storefront in Healdsburg. Journeyman is dedicated to crafting Italian-style meats with a commitment to only the highest level of quality. They work with farms that breed hogs without antibiotics, are fed an all-natural, vegetarian-based diet, and employ humane and sustainable animal farming techniques. These products are the closest thing to traveling to Italy!

Journeyman Meats has an all-encompassing selection of salumi, sausages and meats, but that’s not all. Their wines are top-notch and pair beautifully with their salumi….yes, Pete & Cathy Seghesio have done this many hundreds of times and have crafted an exciting menu featuring their salumi and wine.

The flight includes two-ounce pours of Journeyman wine paired with their artisanal salumi. The Journeyman products will be available for retail sale (at a 15% discount) while supplies last.
