After working for Dean & Deluca for a few years tasting and sourcing wine from all over California, Pax and his wife Pam took the bold step of starting their own label in 2000. Pax started out making big, ripe and bold wines which earned him great accolades from the get-go, but he realized over time that he no longer enjoyed drinking the kinds of wines that initially made him famous. The focus now is on cool climate sites throughout Mendocino and Sonoma. He also changed the way in which he harvested, picking grapes as much as a month earlier than before. In doing so, he became one of the pioneers in a movement to bring balance back to California wine.

Syrah has been the darling of Pax Wines, but they have evolved to include new and exciting varieties such as Trousseau Gris, Vermentino and Mission, along with a host of others recently planted. Pax’s approach is a holistic one: grapes are grown organically, crushed by foot or hand, and the winemaking is done with as little intervention as possible, using only indigenous yeasts.
