Producer notes ~ "43% ABV / 86 Proof 64% Corn 15% Rye 21% Malted Barley We begin by fermenting a traditional sour mash of corn and rye at colder temperatures, but without the aid of refrigeration. Fermentation takes more time this way, but results in a softer whiskey and develops subtle flavors such as vanilla, pear, and raspberry. We then distill the mash in our small batch copper potstill on grain to extract fuller and rounder flavors from the corn and rye. Finally, we barrel the distillate at the Pre-Prohibition standard of 98 proof, so that the barrel may add subtle notes of oak and vanilla and does not overpower the finished whiskey."More info

Arette Reposado is distilled from 100% Blue Agave. It is aged for approximately 6 months in American white oak. Translating from their Spanish only web site, here are the highlights: Arette's distillery is in the heart of Jalisco, and is one of the oldest in the region. It is run today by brothers Jaime y Eduardo Orendain, descendents of multiple generations of Tequila distillers. Producer notes ~ "Barrell Bourbon Batch 031 is a blend of 6, 7, 10, 15 and 16-year-old barrels. The blend was built around the sweetness in a group of 99% corn bourbon barrels and a group of wheated bourbon barrels. To bridge these two groupings, we layered in 15 and 16-year-old barrels for their gentle nuttiness and oak. Producer Notes - "We were inspired to create Bimini Coconut after observing our friends frequently pair our gin with coconut and other tropical flavors. Using the same techniques, we infuse all-natural coconut into our original gin to create a taste best described as “Bimini on Vacation.” Unlike many flavored spirits, Bimini Coconut does not contain any flavor extracts. Instead, we use organic Fair Trade Certified Extra Virgin coconut oil in a process know as “fat washing.” The oil is heated to a liquid state and combined with our original gin to infuse it with pure coconut flavor. After the infusion has completed, the mixture is chilled until the oils solidify and can be strained back out.
