Aged under the intense Kentucky sun, this single barrel bourbon is the product of 225 years of family experience. Aromas of grilled peaches, brown sugar and warm chocolate. The palate is barrel spice and creme brulee with a creamy texture. There is a bit of pepper spice, but is well balanced. Hirsch is rebranding and relaunching its entire lineup, starting with this new bourbon distilled at MGP. It’s a combination of two straight bourbons; the majority (94%) is made with a mashbill of 75% corn, 21% rye, and 4% malted barley and aged 5 years and 4 months, while the remaining 6% is made with 60% corn, 36% rye, and 4% malted barley and aged 6 years and 2 months.More info
Blade and Bow is produced at the original site of the iconic Stitzel-Weller Distillery in Louisville, Kentucky. The original distillery closed its doors in 1992, and Diageo reopened the facility in 2014. Coming from Fort Collins, CO, this 100% sourced bourbon gets it's signature flavors from the high malted barley content in their mashbill. Along with a fair amount of rye grain, you can expect a lighter style with traces of cinnamon and cocoa which layer against traditional notes of caramel and burnt oak. While the aromatics are nice, they’re very delicate necessitating a good hard inhale to eke them out.More info

Once our traditional sweet mash process is distilled in our column stills we enter the barrel at the lowest entry proof we know of in Kentucky. We barrel at 100 proof and 105 proof to highlight the balance of the distillate and alternate solubility expression we get from the barrel at a lower proof.More info
Whiskey distilled in Indiana, finished by Spiritech, a spirits house here in Santa Rosa. Then, loose leaf chamomile flowers from Starwest Botanicals (Egypt) are added. Next raw, unfiltered honey from Colorado is added. It's then finished off with house made Orange & Angostura bitters.More info
Dovetail is a blend of 10-11-year-old whiskey finished in Dunn Vinyards cabernet barrels and an 11-year-old bourbon finished in black strap rum casks and LBV port pipes. Barrell Craft Spirits spend almost a year perfecting the blend before settling on the final product. This is a cask-strength release, bottled at 124.34 proof.More info
