Producer notes ~ "43% ABV / 86 Proof 64% Corn 15% Rye 21% Malted Barley We begin by fermenting a traditional sour mash of corn and rye at colder temperatures, but without the aid of refrigeration. Fermentation takes more time this way, but results in a softer whiskey and develops subtle flavors such as vanilla, pear, and raspberry. We then distill the mash in our small batch copper potstill on grain to extract fuller and rounder flavors from the corn and rye. Finally, we barrel the distillate at the Pre-Prohibition standard of 98 proof, so that the barrel may add subtle notes of oak and vanilla and does not overpower the finished whiskey."More info

This family is one of the few producers that still make tequila in the slow, artisanal way. With the Camarenas nothing is rushed or hurried during the whole process, from the growth of the agave to the final distillation. Tequila Ocho is a joint partnership between the Camarenas and Tomas Estes. Estes, the creator and owner of Mexican bars and restaurants since 1976 is a higly respected personality in the bar and spirits world. He regularly speaks and writes on the subject of tequila. This partnership is an excellent combination since both partners insist on only producing the finest tequila possible. Color- Pale amber, bright, clean and clear, thick consistency. Arette Reposado is distilled from 100% Blue Agave. It is aged for approximately 6 months in American white oak. Translating from their Spanish only web site, here are the highlights: Arette's distillery is in the heart of Jalisco, and is one of the oldest in the region. It is run today by brothers Jaime y Eduardo Orendain, descendents of multiple generations of Tequila distillers. Producer notes ~ "Maraschino has been produced since the beginnings of the Bordiga distillery and was one of the first products Pietro bottled. They continue to use the same recipe which includes both Maraska and Amarena cherries. Both are produced locally, farmed organically, and hand harvested. It is important to have a local source for such a delicate fruit because the minimal travel time ensures the cherries are fresh, intact, and not bruised. The condition of the fruit is key because it makes up over 91% of the total infusion. Bordiga uses the fruit and kernels (the inside of the pits which are crushed) from both of the cherries, and some leaves from the amarena variety. The remaining 8-9% of the infusion comes from Madagascar vanilla beans.More info

From a firm established in 1836 by Edmond Briottet, this wonderful liqueur is made with bananas from Costa Rica which are hand-peeled to expose their pulp. They are then macerated in neutral alcohol derived from sugar beets to release the ripe banana flavor. A great ingredient in a variety of cocktail recipes, as suggested by Briottet here: Try the “After Sex” cocktail: 3 cl of vodka, 2 cl of Briottet Banana liqueur, orange juice, 0.5 cl of Briottet Poppy Liqueur and a pinch of sugar. Put the ingredients into a glass filled with ice cubes and top it up with orange juice. 25% ABV.More info

Intensely bitter since its inception in 1845, Fernet-Branca has been produced according to the original recipe that has been handed down from generation to generation. The bitters are made from 27 herbs and other ingredients.
