Leopold Bros. 5yr BiB Straight Bourbon Whiskey, Denver, Colorado (750ml)
Producer notes ~ "43% ABV / 86 Proof 64% Corn 15% Rye 21% Malted Barley We begin by fermenting a traditional sour mash of corn and rye at colder temperatures, but without the aid of refrigeration. Fermentation takes more time this way, but results in a softer whiskey and develops subtle flavors such as vanilla, pear, and raspberry. We then distill the mash in our small batch copper potstill on grain to extract fuller and rounder flavors from the corn and rye. Finally, we barrel the distillate at the Pre-Prohibition standard of 98 proof, so that the barrel may add subtle notes of oak and vanilla and does not overpower the finished whiskey."

Translating from their Spanish only web site, here are the highlights: Arette's distillery is in the heart of Jalisco, and is one of the oldest in the region. It is run today by brothers Jaime y Eduardo Orendain, descendents of multiple generations of Tequila distillers. Finally, a selection of 10-year-old barrels was added to bring notes of milk chocolate and tropical fruit. 2,371 bottles produced, 55.6% ABV"
